CREAMY BEEF TACO SOUP
11/2 lb Route 304 Lean Ground Beef
1/2 small onion
1/2 red bell pepper (chopped)
1 can crushed tomatoes in juice
4 cups chicken broth
1tsp garlic powder
1 tsp onion powder
1 tsp ground cumin
1 tsp smoked paprika
1/2 tbsp chili powder
1 can corn (drained)
1 can black beans (drained)
1 block cream cheese
Salt & Pepper to taste
Topping options: grated cheese, avocado, cilantro, green onions, tortilla chips, sour cream
Directions:
Take cream cheese out to soften at room temperature. Brown ground beef then add onion and cook till translucent.
Add all ingredients except cream cheese. Increase heat to high and bring soup to a boil for a few minutes. Turn down heat to simmer gently, meanwhile, prep your soup toppings.
Cut cream cheese into small chunks and add to soup. Let cream cheese melt in till mostly dissolved and serve with toppings as desired.
