INSTANT POT BBQ SHORT RIBS

For the bbq sauce
1 tsp vinegar
1 tsp Worcestershire sauce
2 Tbsp liquid smoke
2 tsp ground mustard
1-1/4 cups ketchup
1-1/4 cup brown sugar
1/2 cup minced onion
1 tsp garlic powder
3/4 cup bbq sauce (your favorite kind)
For the short ribs
1 package of Route 304 bone-in short ribs (4-5lbs)
BBQ rub (Your favorite)
1 cup apple juice
Instructions
Make the bbq sauce by combining the first 9 ingredients, stirring and bringing to a boil. Simmer for 10 mins on low and set aside. Prepare the short ribs. Sprinkle all sides of the ribs with bbq rub. Turn instant pot on sauté mode, adding 3 -4 Tbsp oil and working in batches to brown each side of each rib. After each rib is browned, place them all into the instant pot on the trivet, pouring in 1 cup of apple juice. Pour 1 cup of the bbq sauce you made over the ribs closing the lid and turning the valve to sealing. Turn the instant pot to pressure cook on high, setting the time to 45 mins. It will take several minutes for the pot to come to pressure.
Allow pressure cooker to do a natural release for 10-15mins. Take ribs out, placing them on a baking sheet and brush with the remaining bbq sauce, broiling for 2-4 mins in the oven. Brush with more sauce and serve with a mix of roasted potatoes, onion, & sweet potatoes and green beans.
If there’s any leftovers, these are awesome shredded up on nachos or reheated for a short rib sandwich!
